Easy Red Lentil Dal


One of the things I love most about red lentils is that they cook up in almost no time at all.  Unlike their heartier green and brown counterparts, these guys quickly fall apart turning into a smooth, velvety consistency. You don't even need to use a hand blender to achieve the pureed texture. Just let them simmer long enough and you'll get there! Amazing.


This is one of my absolute favorite go-to soup recipes.  I could eat it everyday and be content. Lentil soup is one of those recipes that should be in everybody's repertoire. Lentils are readily available in (almost) every grocery/health food store. They are also a great source of  protein and iron and are healthy and very cheap!




What You'll Need :

Olive oil
Onions, diced
Shallots, diced
Ginger, minced
Garlic, minced
Carrots, diced
Spices : cumin, roasted paprika, turmeric, coriander, mustard seeds, sea salt.
Red lentils
Water
Blackstrap molasses
Rapini (or some other green)

Garnish :
Cilantro
Lime


What To Do :Heat the olive oil in a medium saucepan and stir fry some onions, shallots, ginger, garlic and carrots until fragrant and tender.
Add the spices and stir fry for another minute or 2.
Add the lentils and coat them in the spiced veggie mix, making sure to stir constantly to prevent them from sticking to the pot. Do this for a minute or so.
Add enough water to cover the veggies and lentils by about 2 - 4 inches, depending on whether you like a thinner or thicker dal.
Drizzle in about a teaspoon of blackstrap mollases
Bring dal to a boil and then allow to simmer with lid partially on for about 15 minutes.
Add your green veggies and simmer until tender.
Just before serving the dal, add in some chopped cilantro and squeeze in some fresh lime juice.
Season to taste!

Dal and soups in general are always best a couple of days later! (They also freeze super well) So make sure to whip up a large batch! :)
