Sandwich Tofu Steaks
1 cup apple juice
4 Tbsp Dijon mustard
3 Tbsp tamari
2 Tbsp maple syrup
2 Tbsp white wine vinegar
1 Tbsp toasted sesame oil (or try peanut oil)
1 Tbsp grated ginger
1 Tbsp grated garlic
1.5 tsp onion powder
1.5 tsp of whole coriander seeds, crushed in a mortar and pestle or pass through the blender or coffee grinder for a few seconds
½ tsp dried thyme
Freshly ground black pepper
Sea salt to taste if necessary
Preheat oven to 475 degrees.
Place tofu on a parchment paper lined baking sheet and arrange tofu so that each piece has its own space. No touching!
Drizzle some of the marinade over each tofu slice.
Bake for 10 minutes.
Remove from oven and flip the tofu slices and drizzle a second time with marinade.
Return to oven to bake for 10 minutes or until sufficiently baked and browned.
